STOP ! don't make that Hokey Pokey. at least not with that recipe. It would would seem that Nigella must have so many brilliant recipes running around in her head that she got this one wrong on TV last week. Nigella gave the recipe for her hokey pokey exactly as described on this site and my wife ( a very good cook herself made it exactly as Nigella instructed....Disaster !! it was like soft toffe cake and would not set completely... I then teased my wife for days as to her skills in the kitchen as compared to the wonderful Nigella. My wife insisted that the recipe must have been wrong as she is adamant she copied it to the letter and even watched the repeat show of Nigella's express to confirn she had done so,,,I continued to mock her culenary skills....until tonight , I found the correct recipe on another website... the only difference being ....2 Tablespoons of syrup (NOT 4) and 1 heaped TABLESPOON of bicarb (NOT 1 1/2 Teaspoons) ....Same amount of Castor sugar (100g) and same method....try this and you will see the difference...try coating the set mixture with melted dark chocolate then leave to set again

Thank you for the recipes. I searched also the web for them, but couldn't find them either. Next time I'll try to make some notes while watching the programme. I love the recipes, they are so easy and so without any effort. Beautiful simplicity!
Thanks again,
Thea (Netherlands)

Cheers for the recipes - had to contend with a screaming baby whilst trying to watch this weeks Nigella therefore missing quantities of the hokey pokey recipe! Will definately be trying that one out - (baby permitting!)
